HOW TO IDENTIFY A QUALITY MATCHA TEA

The quality of Matcha varies according to:

Type of leaf picked: When tea leaves are harvested, only the most tender leaves and buds are selected, carefully plucked and processed as green tea. The best are from the first days of spring. Such as Miracle Organic Matcha (ceremonial grade): lots of buds and very tender and/or Organic Matcha (premium grade): with buds and young leaves.

Shading time (cultivation under cover in the shade before harvesting): the longer the shading time, the more chlorophyll the leaves retain, the more intense and brighter the green colour (both when dry and after preparation) and the more amino acids (sweeter taste).
